Slow Food is a cultural movement born in Italy in 1986 which promotes the world of gastronomy first of all as a beneficial pleasure. The concept was founded by Carlo Petrini to counteract the increasing development of fast/junk food and the frenetic lifestyle of modern society, while simultaneously raising awareness about endangered local foods and traditions.
Slow Food culture fosters a model of food production that is summed up with the motto “Good, Clean and Fair.” Good stands for the high quality and healthiness of the food, Clean refers to environmentally responsible production of food, and Fair reflects the costs for both customers and producers. movement and its guidelines gave rise to the so called Mercati della Terra, or Earth Markets, an international network of farmers’ markets with quality food, bought directly from the producers.
